Super Vin Santo
To continue the Whiskey-mania that is the Miami Whiskey Mash, we humbly present some of the best whiskey cocktails in Miami by the incredible bars and bartenders that make and serve them.
This week we visit one of the newest additions, and much anticipated concepts in Wynwood, Beaker & Gray (2637 N. Miami Avenue). The collaboration between Executive Chef Brian Nasajon and Bar Guru Ben Potts has definitely rendered the right type of attention, read about it HERE. B & G is truly presenting an eclectic mix of old and new classic cocktails, with all fresh ingredients and incredible technical expertise. It was defintiely hard to choose one whiskey cocktail, but the Super Vin Santo called to our religious side.
We got the lowdown directly fromm the purveyor of this fine concoction, Mr. Ben Potts. "The Super Vin Santo's creation was by no means atypical, but its existence came about in a very roundabout way. Initially the cocktail was supposed to be a nutty, Manhattan style cocktail with amontillado sherry, orgeat, and walnut bitters, and a very nutty bourbon. I really wanted to work with Michter's American Whiskey, because of the balance it has between sweet and spicy, but for some reason it just wasn't working with the sherry and the orgeat. As I was looking through my modifiers, I came across Faretti Biscotti liqueur, which has a sweet but still nutty flavor, and it worked very well with the whiskey. I swapped the amontillado for the manzanilla, with it's drier, lighter body, and added a couple of dashes of Aphrodite bitters, with it's chocolate, coffee, and ginger flavors, and it worked together perfectly. The name Super Vin Santo comes from the Italian dessert wine Vin Santo in which biscotti is dipped. Naturally, the Super Vin Santo is served with a side of biscotti as well."
